Fall

Frost greeted me this morning.

granola.bars 012

But so did the Sun, and he stayed around all day. Maybe that was why I was in such a good mood today. Or maybe it had to do with this girl.

granola.bars 001

Meet Sadie, cutest, sweetest girl alive. But don’t we all say that about our dogs? She’ll be 5 months this Sunday, and she’s still scared of the camera. This was about as still as she would get.

Or maybe I was in a good mood because I got an early afternoon to work on some project work. And I might have made some half decent granola bars.

granola.bars 036

There is a granola bar sold at the hospital in their cafe that is TO DIE FOR. It’s sweet, gooey and chewy, with chocolate and raisins, and peanut butter I think. But it’s also huge, oily, and full of SUGAR. I think it might be worse than a cookie. So I needed to replicate it. This version is a good start, but they’re not perfect.

granola.bars 029

I’m not sure what to change, I’d like them to be gooier, maybe some more peanut butter? No egg? I’ll write the recipe, and if you have any advice, let me know!

Peanut Butter Granola Bars

Ingredients

2 tbsp margarine
1/2 cup brown sugar
1 cup peanut butter (natural pb, none of that kraft krap)
1 egg
1 tsp vanilla extract
2 cups oatmeal
3/4 cup chocolate chips
3/4 cup currants (I couldn’t find any raisins!)
3/4 cup nuts (I used walnut pieces, but I think sunflower seeds and pumpkin seeds would be wonderful too)

Directions

1. Preheat oven to 325*. Grease a regular sized cookie sheet.
2. Beat together the margarine, brown sugar, peanut butter, egg, and vanilla extract until a smooth mixture occurs.
3. Mix in the oats, chocolate chips, currants, and nuts until it becomes a cohesive mixture.
4. Pour mixture onto the greased cookie sheet. Use your hands or a spatula to press the mixture flat, equal in height to edges of the pan (I couldn’t get it to quite cover the pan, there was an inch or two without any.)
5. Bake for 20minutes, allow to cool, then cut into however big of pieces  you want. I made about 18 smallish ones.

So blog readers, writers, what changes do you think might be made? What would leaving the egg out do to the texture?

Kitchen Sink Granola

Well, it’s been a long week.

And it’s only Wednesday. My week has honestly involved a lot of me napping and watching Sex and the City. I know. How can that be a long week? Well, I’m sick, so doing anything is basically out of the question.

granola1

I did however, make granola. And maybe it’s because I was sick when I made it, and basically can’t stop eating it, that I’m still sick. Just a theory.

It was seriously a gorgeous day on Monday. But I ran one errand, and felt too exhausted to do anything. Except make this granola, based on granola we made in class one and a half weeks ago.

granola2

Do you see that sunny day?

It actually looks a lot like that now, and the courtyard outside my window is full of people happily enjoying some vitamin D.

Maybe I’ll join them.

But first I’m going to eat more granola.

granola3

The best part of this granola is how flexible it is, you could through just about anything in. Well, maybe that’s what’s great about any granola right? But just to give you an outline to work with, here is what I did.

Kitchen Sink Granola

Ingredients
1/4cup Honey
1/4cup peanut butter (or nut butter of your choice.)
1 tbsp coconut oil
4 cups large flake oats
3 tbsp ground flaxseed
1/2cup chocolate chips
1/2-1cup raisins
1/2-1cup almonds

1. Preheat oven to 325. (I accidentally had it on 350, and some of my granola is definitely more on the burnt side).
2. Melt honey, oil, and peanut butter in microwave so it can easily be blended together and poured.
3. mix together the oats and ground flaxseed, then pour in the honey and peanut butter mixture. Thoroughly combine until all the oats are coated (there will be a few clumps of granola goodness).
4. Pour mixture onto cookie sheet, and spread into an even layer. Throw in over for 10minutes or so. Remove, toss around a bit, and again put in oven for 10min; repeat another 1 to 2 times, until oats are toasted and fragrant. Allow to cool.
5. Once cool throw the oats into a bowl, and add in remaining ingredients; mix and try not to eat too many while you’re at it.

WARNING this granola is addictive. I’ve already eaten one jar, even if it was the smaller of the two jars, it is still GONE.
granola4

Yep it’s that good. And you could basically use any ingredients you have on hand; almond butter, peanuts, walnuts, apricots, dates, carob chips… Try whatever you like.

Now if you excuse me, I’m going to go and take another nap. All this writing has been exhausting.

I spoil myself…

For those of you foodies, you know how expensive a trip to Whole Foods, or Capers might be. Well this week I was out job hunting and I found myself outside Capers, and I knew I would go in…

And I did. Look at some of the loot I picked up!

IMG_9913
Some raw cocoa nibs, nutritional yeast, and greek yogurt. Yum.

Of course I had a snack of one today:

IMG_9903

Look at how thick it is!

Of course I did eat it from a bowl! And I topped it with some peanut butter, cocoa powder and some agave. And something interesting happened…

I wanted to melt the peanut butter a bit, make it more pliable for mixing… And I burnt it!

IMG_9911

Did you know you could burn peanut butter? In a microwave? I didn’t! Lol. Oh well, it worked fine.

Today I did a little “real” shopping and spoiled myself with new shoes, a sports bra, jacket and bikini! I didn’t mean to buy so much, but it sort of happened. *blush*

What has everyone else been up to this weekend? Anything exciting?

PS Storm the wall is tomorrow, hopefully I can get some photos and recap the race for you!

16k Baby!

IMG_9634

Me: pre run. (you don’t wanna see the post run. 😉 )

I ran further this year. yay!

Stats:

Distance: 16.21km (10.07m)
Time: 1:31:30
Fastest km: 4:47
Slowest km: 6:35

So even though I only added on a little over a kilometer to my mileage my time was a lot slower. I had no pace buddy to really push me! But still, that’s not half bad I say.

After the Run

I broke out a new toy:

IMG_9639

A foam roller. I’ve read a lot about these, and I wanted to see how well it would work. I feel good to by honest. I don’t know if my legs feel better because a) I ran slower or b) I used this. Probably a mixture? It sure felt good to get into those muscles!

Also post race fuel:

IMG_9643

Cinnamon Oats:
-cinnamon, banana, milk, 1/3c oats, raisins, a little sugar and LOTS of chunky peanut butter. So good.

And that’s been my day, time to do some prioritizing and get some stuff done so I can maybe enjoy some Oscars tonight

Another Wednesday. Another Day

Well Wednesday has come and nearly gone.

It started with this:
013 - Copy

wasa crackers + pb + fuji apple and some Tim Hortons Coffee. Yum.

031

Snuck another one since I was still a wee peckish. 😉

015 - Copy

Lunch was a Green Monster in A Bowl (a mix of Angela and Kath). And a cracker with cheese:

016 - Copy

Then off to my three hour class.

Home and ate the following:

017 - Copy 018 - Copy

That there white thing is a Birthday bun. It’s a Chinese treat thing. You steam a white bun, and it’s filled with a yummy lotus paste. A wee bit sweet, but not too bad.

I went to a meeting tonight for a Suite Style musical being held in residence! Oh! Exciting. 🙂 And I had my council meeting. Apparently in a week and a bit I will be going Paintballing…

Now I’m exhausted, and getting ready for some shut eye. Night all!

Let the Weekend Begin?

YAY! The week is over! It’s the weekend or middle I guess to be honest. But all finished classes, and Remembrance Day tomorrow, so…. 😉 Party?

Only a school work party.

Monday was a good day, it started with cereal:

IMG_2905

Then tutorial, class, yoga and some scrumptious lunch:

IMG_2908

Dinner was leftovers my roommate brought back from a restaurant called the Foundation, for which I’ve heard mixed reviews. It was a super rich peanut sauce noodle thing. It was decent, not the best, not The Noodle Box spicy peanut. But it did the trick. However I inhaled it after my run far too fast to take a picture.

My run yesterday was good, just over 6k, no hurting.

I have a 10k on SUNDAY! AHHH! I’m starting to get nervous.

Today I started with cereal again, and now my box is empty of cereally-goodness! 😦

IMG_2909

Added in some raisins for kicks.

Then I had a class, a midterm (Here’s hoping I kicked butt, just so glad it’s done!). I had a Starbucks treat after my midterm: a tall skim milk caramel brule (so French) late and a lemon poppy seed loaf.

Despite that after my last class (wahoo!) and a short 3k run I was famished:

IMG_2911

IMG_2910  IMG_2912

IMG_2913

I totally had two apples + pb (loads of the stuff 😀 ). And crackers with those two slices of cheese. Seriously so hungry. I was just a bottomless pit there for a bit. 😉

Now I’m off to run some errands; buying sweatshirts for my residence and get me some groceries, and maybe a movie for the off night. Though I do plan to do some catching up!

Later all.

Something New

Well November is upon us. A new month, some new foods? yes? We all like trying new things don’t we.

I’m not eating so much new foods as it just feels like I’m eating differently. For instance, on Tues/Thurs I used to bring a peanut butter or almond butter sandwich to my first class.

Well on Tuesday I was thinking to myself, you know I really just don’t feel like a sandwich today. And I don’t have time for oatmeal. So this is what happened

IMG_2880

hmmmm coffee and cereal. Oaty Bites to be specific. I’d honestly forgotten how much I loved cereal. I used to eat cereal every day for breakfast. Being the picky eater that I was I also has a cereal du jour:

  • Sugar Crisps
  • Honey Nut Cheerios
  • Frosted Flakes (They’re great!)
  • Whole Grain Cheerios (or is it multigrain?)
  • Bran Flakes (er my uber health phase, but I did indeed like them)
  • No cereal. 😦

I feel like it’s been awhile since I really enjoyed cereal, and well here I am again! Oatmeal ( there was a time when I vowed I’d never eat the stuff. My parents ate it every day since I can remember, I never liked it.) and cereal seem to be new staples along with my usual peanut buttah.

Speaking of which…

IMG_2882

Hmmm. Cereal doesn’t fill me as much. I was ravenous by 10:30am today. Came home (my last class of the day was cancelled, yay!) and had a delicious snack of pb and a gala apple.

Well I really should end this procrastination session and use my extra time wisely, shouldn’t I? UBC is having a Wellness Fair and my residence is making a trip there in a few hours. I definitely think I’ll go along. Or maybe I’ll just go earlier… I’m in the mood for a Starbucks something (the Christmas Cups are out!) and maybe a Sprouts vegan brownie (had one yesterday, drool).

Hopefully UBC Thrive is interesting, I’ll tell you all about it later!

Me No-likey!

Hey all! Sorry to be so MIA, but I just haven’t had anything really interesting to write about lately. Till this happened to me at lunch…

IMG_2879

Hmmm, you think, looks like just some ordinary PB and banana on toast. Delicious? Weird? Not really…

Well folks, this is it. This is the weird bit. I hate bananas. Ok hate is a strong word, but since I can remember I could not consume a banana unless it was in a baked good. Or mashed into non-existence in oatmeal. Or blended to soupy perfection in a smoothie.

But today I was thinking about bananas and at lunch I noticed half a banana I had laying around left over from yesterday’s oatmeal and I just thought maybe… So I took a thin slice and tried it. Chomped down, chewing and tasting, not bad not bad. I swallowed; low and behold, my world didn’t end!

See, when it came to bananas my dislike was entirely a texture thing, not a taste thing. So while I loved bananas in breads or oatmeal, I could eat just a plain banana.

This my friends is the official end of my picky eating habits. Very sad indeed.

I know I’m not alone in my history of being a picky eater. In fact many kids are picky eaters. Apparently this term has a name: neophobia (the fear of trying new and unknown things). Apparently it can take up to 16 times before a kid will try something new. That means you’ll have to place the food in front of the kid at 16 meals before he or she will even take a bite.

My parents were pretty good with my picky eating, making sure I had my “not icky tomato sauce” (ie plain, no meat or other veggies in the sauce) or my plain cheese pizza.

I honestly didn’t grow out of my picky eating until I became vegetarian when I was fifteen. I then started to eat a few more vegetables (I’d always loved a select few, but there were a lot I never ate). Even eggs came back on my menu after a bit. Seriously it’s funny how something considered a restrictive diet by some really expanded what I ate over all.

Now I’m not afraid of any foods really. And I don’t eat meat now entirely out of habit; I seriously have no want to eat meat. Ok occasionally the bacon frying smells really good, but it doesn’t make me want to eat it. The only food I can really think that I don’t like is fish. There’s just something about that fishy smell that’s really off puting for me. I don’t know why.

Well I really should be off. I have a great afternoon ahead of me:

IMG_2876

As a part of my “get back on track” I’m trying to also get back into a productive groove (I do have a pending midterm next week! It seems I’m not the only one in a back on track mood. Angela at Oh She Glows is getting back on track. And even my friend Marianne has started trying

Falling Back

Last night involved a lot of this:IMG_2850

A few of these:

IMG_2865

A few of these guys made some appearances:

IMG_2860

And the night was better then I could have thought. I love Halloween and the fact that I partied all night is awesome. I had a tonne of fun, a tonne of drinks, lots of dancing, a little running….

I woke up early today, with an extra hour of sleep (yeah fall back!) but still early… And I wanted some normal food.

IMG_2875

Hmmmmm. peanut butter with a little oatmeal on the side. 😉

I’ve been semi-productive today, and extremely lazy. I screwed up my calves last night running. :S For some reason running downhill sometimes causes huge knots in my calves. Any other runners get this? Or am I all alone?

I don’t think it’s anything serious. I”m always afraid of running injuries. Or any sports injuries for that matter.

I’ve spent the day studying, watching tv, eating, eating and eating. 🙂 Some days are just like that, aren’t they?

Tomorrow I’ll be back to normal though I think, monday’s always the best day to really get to normal I say!

Hope everyone enjoyed this awesome holiday!
