Kitchen Sink Granola

Well, it’s been a long week.

And it’s only Wednesday. My week has honestly involved a lot of me napping and watching Sex and the City. I know. How can that be a long week? Well, I’m sick, so doing anything is basically out of the question.

I did however, make granola. And maybe it’s because I was sick when I made it, and basically can’t stop eating it, that I’m still sick. Just a theory.

It was seriously a gorgeous day on Monday. But I ran one errand, and felt too exhausted to do anything. Except make this granola, based on granola we made in class one and a half weeks ago.

It actually looks a lot like that now, and the courtyard outside my window is full of people happily enjoying some vitamin D.

Maybe I’ll join them.

But first I’m going to eat more granola.

The best part of this granola is how flexible it is, you could through just about anything in. Well, maybe that’s what’s great about any granola right? But just to give you an outline to work with, here is what I did.

Kitchen Sink Granola

Ingredients
1/4cup Honey
1/4cup peanut butter (or nut butter of your choice.)
1 tbsp coconut oil
4 cups large flake oats
3 tbsp ground flaxseed
1/2cup chocolate chips
1/2-1cup raisins
1/2-1cup almonds

1. Preheat oven to 325. (I accidentally had it on 350, and some of my granola is definitely more on the burnt side).
2. Melt honey, oil, and peanut butter in microwave so it can easily be blended together and poured.
3. mix together the oats and ground flaxseed, then pour in the honey and peanut butter mixture. Thoroughly combine until all the oats are coated (there will be a few clumps of granola goodness).
4. Pour mixture onto cookie sheet, and spread into an even layer. Throw in over for 10minutes or so. Remove, toss around a bit, and again put in oven for 10min; repeat another 1 to 2 times, until oats are toasted and fragrant. Allow to cool.
5. Once cool throw the oats into a bowl, and add in remaining ingredients; mix and try not to eat too many while you’re at it.

WARNING this granola is addictive. I’ve already eaten one jar, even if it was the smaller of the two jars, it is still GONE.

Yep it’s that good. And you could basically use any ingredients you have on hand; almond butter, peanuts, walnuts, apricots, dates, carob chips… Try whatever you like.

Now if you excuse me, I’m going to go and take another nap. All this writing has been exhausting.

White Devil

Well hello my friends! It has been awhile hasn’t it?

I’ve been up to normal student life events; going out with friends, procrastinating, paying for that procrastination by cursing myself during the midterm!

I’ve also been indulging my student eating habits. Sugar, sugar, sugar has been my drug of choice for the last few days. I’ve just been craving chocolate (and for coffee) like mad, and giving in like crazy. If I indulge in extra coffee I do get decaf, seriously, it’s the taste I like, coffee with a bit o’ cream? Heaven. But usually it’s a coffee and a cookie that I crave.

My sugar has ventured into many aspects of my eating…

Why am I craving sugar? I can’t really say… There’s a couple things.

a) I was stressed about the midterm
b) I like sugar, and unfortunately I’m getting in a cookie-before-one-class habit.
c) I’m hella tired.

C is probably the main reason. I’m really tired, and the culprit is not being able to sleep. And why can’t I sleep? I’m not really sure, because I’m definitely tired when I go to bed,but something just keeps me awake. I don’t think it’s completely in my mind, sometimes I definitely just can’t turn my brain off. But the light coming through my windows really bothers me. I might have to try something to block it out. Anybody use those eye cover things people always wear for “beauty sleep”?

Of course, the tired might be because my main source of food lately has been sugar, and that gives you a spike of blood glucose, then quickly drops, leaving you tired and lethargic (oh yeah, that’s right I just finished studying glycemic index thank you very much)…

So maybe it’s a whole twisted circle; I’m tired and my body wants sugar, because that will give me energy fast, then I’m soon tired again… leading me to want sugar! oh no! Whatever shall I do? (just kidding, I honestly think I’m mainly due to sleep deprivation)

What do you do with a craving? Just give in? Or think about what it is your body might be asking you?

PS, you know what’s not helping? Watching Alton Brown cook up some cinnamon buns on Good Eats.

Christmas Eating Recap

Hello! Sorry for the long break! What can I say? Without a schedule I get really bad at actually doing stuff I need to be doing. I work much better when I’m busy.

So what have I been up to? Baking. Cooking. Eating. 😀 More eating, and lots of TV watching. I’m pretty sure I haven’t watched this much TV in… well, probably since summer after my first year. But for once I’m sort of enjoying the total lazyness.

So when I last left you I was about to get into some baking. Oh boy did I.

May I present some Orange and Almond Biscotti:

The next day I made supper. At least I think it was the next day, they all blend, so maybe it was a couple days later. It was a delicious Acorn Squash and Coconut Curry soup. It was soooo amazing. The coconut milk made it so buttery. I didn’t follow a recipe at all. Just cooked it up from what I knew about squash, and curry spices. Yum.

We had Christmas Dinner on Christmas Eve. My brother is an aspiring speed skater, so he had training early today. Watch out, one day he just might be in the Olympics (not this year though, he’s still young for a skater, and isn’t quite on the national team).

On the Menu:

  • Turkey (not for me)
  • Wild Rice stuffing
  • Brussel Sprouts with Mushrooms
  • Mandarine Orange, Pecan and Blue Cheese Salad
  • Mocha Cake and traditional Coconut and Pecan Icing.
  • White wine (few too many glasses)

Ice Cream Time

Last day of classes done and gone!

My cold is nearly gone!

And the weather has been so nice!

And tonight I’m going to study! Nah. Don’t think so. Though it might happen. Mostly I’m taking this evening to just sort of… do what I feel like without feeling guilty. I don’t have plans to go out, I’m not doing anything big…. Just watching TV and of course enjoying a bowl (or two) of…

I might write in my journal (pictured above). I used to write in my journal a LOT. Then I got busy. It’s always funny to me how when it’s probably most interesting to really record what’s going on inside, we don’t. That journal was start by yourstruly two years ago Dec 1. Wow. I can’t believe it’s been that long. Oddly enough, I do flip through it, and it’s funny because I totally know what I’m talking about sometimes. Other times, I’m like, what am I talking about?

Either way it’s fun to look back.

My appetite came back tonight, which is nice. Supper was an egg on a bed of brown rice. Sooo good.

Alright, a really intriguing episode of Criminal Minds is on, gotta go!

On the Mend

Well I am on the mend. In no thanks to my current eating. Which has included a lot of:

I always just want comfort food when I’m sick. I’m not very good at eating super healthy foods that will heal me. Don’t worry though; I’ve had some good ol’ tomato soup a couple of times and maybe a few clementines so I’m definitely getting in some Vitmamin C. I’ve just mixed in the above foods… and maybe a pizza pop or two (*blushes* I haven’t had a pizza pop in goodness knows how long, but I got a strange craving for one yesterday and just gave in…).

Other than that life has been study study study. All my papers are out of the way, my TA for a course I had yesterday was such a dear. We had a presentation to do, and I went with hopes I’d be strong enough, but I just couldn’t go through with it. I asked my group if they’d be okay with me leaving, and they said yeah, that’s fine. And my TA agreed as well, I asked about making up marks and she said she’d let me know. And apparently I don’t have to worry about it, which is great. I mean I did all the work… I just didn’t present it, but my group did. 😀

On another note, since I’m not eating all my produce it’s starting to look like this:

Super ripe! I don’t know how I’ll feel about fruit tomorrow, so in the spirit of procrastination I was proactive and did a bunch of chopping this evening:

And into the freezer they went! I see I caught my shadow, dang university dorm room lighting! 😦

Alright, I can’t procrastinate anymore, I only have the ittiest bit left on this section of physiology, so I’m off to finish it up!

Wellness Day

Before leaving for the fair I had some lunch:

I got my blood pressure done: 100/70 (low normal, good apparently!), I got my posture checked; all good, except my right hip is far higher then my left, and apparently I put about 10lbs on my right hip as apposed to my left hip! I sometimes get lower back pain, and this might be the cause! I’m really curious to go to the chiropractor actually and see what can be done/figured out… I also got my body fat measured, which included a weigh in. 😀 Lower then last week even with food and being later in the day. There were some other cool things like info on cancer, mental health, UBC farm, and so much more. I also picked up this delightful snack while at the sub:

Vegan brownie from Sprouts. And some earl grey tea (only because I wanted one of those cups. 🙂 ).

I went to the gym with my friend Joyce. The residence beside ours has a beautiful free gym with all new equipment! We did:

  • 35min on stationary bike
  • Abs, the following twice through:
    • 20 crunchs
    • 10/side bicycle
    • 10 leg lifts
    • 20 supermans

Then I had supper:
